Rub for Beef

Feel like cooking a brisket low and slow on your kamado, or grilling up a nice beef steak on your Big Green Egg? Create your own rub : use this beef rub recipe to tailor the flavour of beef rub to make it your own personal recipe. If you like the taste of paprika, add a little more smoked paprika powder. If fennel’s your favourite, add some extra fennel seeds to make the rub to your taste!

INGREDIENTS

RUB

5 g juniper berries

12 g black peppercorns

15 g mustard seeds

6 g fennel seeds

5 g ground cumin

15 g smoked paprika powder (sweet)

15 g madras curry powder

10 g granulated garlic

5 g ground nutmeg

5 g ground ginger

12 cloves

200 g fine salt

125 g dark brown sugar

METHOD

Grind or crush the juniper berries, black peppercorns, mustard seeds, fennel seeds and the cumin using a spice grinder, coffee grinder or mortar and pestle.

Combine all the ingredients for the rub and store in a sealed container until you need to use it.
