Big Green Egg – Roasted Sweet Potatoes with Feta and Parsley

INGREDIENTS

SWEET POTATOES

4 medium sweet potatoes
200 g feta

½ bunch of flat parsley

PREPARATION

Ignite the charcoal in the Big Green Egg and heat, with the convEGGtor and the grid, to a temperature of 180 ° C.

PREPARATION

Place the sweet potatoes on the grid and close the lid of the EGG. Let the potatoes roast for about 90 minutes until they are soft. In the meantime, cut the feta into strips. Pick the leaves from the parsley and chop them finely.
Remove the sweet potatoes from the EGG and cut them lengthwise to about two thirds. Fill them with the feta strips and sprinkle with the finely chopped parsley.

Tip
No sweet potatoes at home or do you want to offer your guests a choice? You can roast and fill regular potatoes in exactly the same way. Preferably use a crumbly variety for the best and tastiest result.
